Home to the only coal-burning oven in Georgia, Max’s Coal Oven Pizzeria will wow Atlantans with the simple, delicious and authentic pizza that New Yorkers have loved for years, courtesy of New York native and pizza lover Chef Nick Oltarsh.
The restaurant’s signature feature, the DOUGHPRO coal-burning oven, enables Max’s to serve perfectly crisp and piping hot pizzas, creating a unique taste and texture that has been a hallmark of New York City pizzerias for more than a century. Embracing the traditional art of pizza making, Max’s invites guests to enjoy a taste of the Big Apple’s best paired with Atlanta’s Southern hospitality.
A New York City native, Executive Chef Nick Oltarsh quickly became a fan of the city’s famed Little Italy. Some of his earliest childhood memories include visiting his favorite pizzerias and spending time at home with his mom making pizza with her special family recipes. Nearly 30 years later, Oltarsh incorporates these recipes and lessons in the kitchen at Max’s Coal Oven Pizzeria.
Max’s is all about the pizza, and the pizza is all about the crust. And Max’s has created the perfect dough—light with some spring to it, yet crusty with a toothsome, chewy and elastic quality.
Atop this foundation of flavor sits Max’s secret recipe red sauce, an Oltarsh family favorite. Mozzarella, classic meats and fresh vegetables supply the delectable finishing touches. From sausage and pepperoni to peppers and onions, simple yet flavorful combination’s define the menu at Max’s.
In addition to traditional 14-inch and 18-inch pizzas, Max’s offers a selection of classic salads, pastas, hot and cold Italian sandwiches and signature coal-oven wings
